Fresh Tomatoes, hearty mushrooms, cheesy mozzarella and perfectly cooked chicken make for an ideal springtime dinner! Topped with Pasta Jay's refreshingly robust Classic Marinara, this dish is a light, bright meal that the whole family will love!
Ingredients
- 6 chicken breasts , skinless, boneless
- 1 teaspoon basil
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup cherry tomatoes
- 1 cup mushrooms, sliced
- 2 cups Pasta Jay's Classic Marinara
- 2 cups mozzarella cheese , shredded
- Olive oil
- Fresh basil, roughly chopped for serving
How to Make
STEP 1: Preheat oven to 375 F.
STEP 2: In a small bowl mix together the garlic powder, thyme, rosemary, red pepper flakes, basil, oregano and salt and pepper.
STEP 3: Season all sides of the chicken breasts with the spice mixture and place in a large lightly oiled casserole dish.
STEP 4: Top each chicken breast with the sliced mushrooms
STEP 5: Pour Pasta Jay's Marinara sauce over the chicken breasts. Make sure the chicken is evenly coated.
STEP 6: Pour the cherry tomatoes around the chicken, so they sit within the marinara sauce.
STEP 7: Top with shredded Mozzarella cheese.
STEP 8: Bake, uncovered, for 27-35 minutes, or until the chicken is cooked through and tomatoes have blistered.
STEP 9: After the chicken has cooked through, heat your broiler to HI and allow the dish to broil until cheese is golden and crispy.
STEP 10: Remove from oven. Top with fresh basil and serve immediately. Enjoy!
