Ingredients
BBQ Pulled Pork:
- 2lbs pork shoulder
- 1 medium red onion, quartered
- 1/2 cup Schultz’s Gourmet Original BBQ Sauce
- 2 cloves garlic
- 2 tbsp Schultz’s Gourmet Original Rub
- ¼ cup Apple Cider Vinegar
- ¼ chicken stock
- Salt & Pepper
Nachos:
- Tortilla Chips
- Mexican Cheese Blend
- Queso
- Black or Pinto Beans
- Jalapeños, pickled or fresh
- Diced Tomatoes
- Cilantro
- Sour Cream
- Red Onion, diced
How To Make
STEP 1: Make pulled pork. Season pork shoulder with Schultz’s Gourmet Original Rub. Place pork shoulder in large slow cooker. Mix together Schultz’s Gourmet Original BBQ Sauce, apple cider vinegar, and chicken stock, pour over pork shoulder. Add onion and garlic to slow cooker. Cover and cook on High for 4 hours, or until pork is easily shredable with two forks.
STEP 2: Preheat oven to 400°F. Spread a base layer of tortilla chips on a large non-stick baking sheet. Evenly top with pulled pork, cheese, beans, tomatoes, queso, red onion, jalapeños and a drizzle of BBQ sauce. Continue layering tortilla chips and remaining nacho ingredients as desired.
STEP 3: Cook nachos for 5-10 minutes, or until cheese is fully melted and bubbling. Remove from oven, top with sour cream and fresh cilantro, serve immediately. Enjoy!
