We've got nothing but love for timeless classics, but we think there's always room for a little improvement. So, we've decided to "Schultz-ify" everyone's favorite—pot roast! Our recipe is everything you've ever had or wanted in a pot roast but with the addition of our secret ingredient, Schultz's Gourmet Original Rub! It doesn't sound like a huge change to your classic pot roast, but the addition of our Original Rub, gives it just enough sweetness, smoke and spice!

INGREDIENTS
- 1 tablespoon olive oil
- Schultz's Gourmet Original Rub
- 4 pounds chuck roast, boneless and trimmed
- 2 yellow onions chopped
- 2 tablespoons minced garlic
- 1 pound baby potatoes, halved
- 4 large carrots, cut into 2-inch pieces
- 2 stalks celery, cut into 1-inch pieces
- 1/4 cup balsamic vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon brown sugar
- 2 teaspoons dried thyme
- 2 teaspoons crushed bouillon
- 1 cup reduced-sodium beef broth
- 2 tablespoons flour
- salt & pepper, to taste
How To Make
STEP 1: Heat oil in a large skillet or pan over high heat. Season chuck roast with salt, pepper and Schultz’s Gourmet Original Rub. Sear until browned on all sides (about 6-7 minutes each side). Transfer roast to the bowl of a 6-quart slow cooker.
STEP 2: Add the onions, garlic, potatoes, carrots, celery, balsamic, mustard, brown sugar, thyme and bouillon. Season with salt and pepper to taste. In a separate bowl, mix the stock and flour. Pour into the slow cooker bowl.
STEP 3: Cook on LOW 7-8 hours, or until the meat is cooked through and tender, and vegetables are soft.
STEP 4: Slice the roast, spoon over additional sauce and serve. Enjoy!
