Sometimes getting a picky eater to finish their lunch is as simple as switching up your meals. This “breakfast” themed lunch is packed to encourage our picky eaters to eat their fruits, veggies, carbs, and protein. In our favorite Omielife lunchbox thermos compartments, we have Three Bears quick and easy cranberry vanilla oatmeal, garnished with freshly diced strawberries, raisins, and crumbled Nature’s Bakery fig bars. We also added Schultz’s Gourmet breakfast potato recipe, more fresh fruits and, of course, Vermont Smoke & Cure BBQ minis for added protein.
Three Bears Oats Instructions:
Remove the seal and lid.
Add boiling water to fill line. Mix well. Replace lid and let stand for 1 to 2 minutes.
Use more or less water for just-right thickness.
Schultz’s Gourmet Breakfast Potato Recipe:
– 4 large Russet potatoes (washed, peeled and cooked)
– 3 tbsp. of Schultz’s Gourmet Seasoning & Rub
– 2 tbsp. of extra virgin olive oil
Cube 4 large, cooked potatoes.
Place a large pan over medium/high heat and coat the bottom of the pan in olive oil.
Once olive oil is hot, fill the pan with the potatoes.
Generously coat the potatoes in the seasoning & rub and toss potatoes in pan.
Flip and cook until potatoes are golden brown and enjoy!
